    Our Team

    Shawn Sherlock

    Shawn Sherlock

    Chief Brewing Officer (CBO)
Shawn is a beer and brewing obsessive. He started brewing at home over 20 years ago and has been brewing commercially since 2006. Shawn worked as both Brewer and Head Brewer at Murray’s Craft Brewing Co from 2006 to October 2014, earning a reputation for brewing award winning, innovative, full flavoured beers. In late 2012 Shawn was awarded Australian Brewer of the Year. FogHorn Brewhouse is the culmination of many years of studying the local and international Craft Beer sector – and a lot of daydreaming about setting up a Brewhouse in Newcastle.
    Daniel Correia

    Daniel Correia

    Head Chef
Daniel Correia, ex SMH Good Food Guide hatted restaurant Sean’s Panaroma Bondi, and Red Rock Leisure Hotels joined us as our Head Chef in November 2015 having recently arrived in Newcastle from Sydney.

Daniel’s food passion is ‘Paddock to Plate’, reinforcing FogHorn’s Locavore approach to sourcing local ingredients for our menu – daily menu specials based on what’s best and seasonal from our local suppliers in addition to our regular menu makes FogHorn the place to eat.

    Rachel Doyle

    Rachel Doyle

    Restaurant Manager & Function Co-ordinator
Rachel has a unique background in customer service and administration. With around 10 years experience she loves the fast paced, lively hospitality environment and enjoys interacting with customers. She is the one we go to when we need a problem solved and fast.

Rachel is key to the smooth running of all things Front of House at FogHorn Newcastle whilst also being a bit of a whiz in the administration department.

Rachel loves to bake and any given day you can find at least one of her delicious treats on the dessert menu at FogHorn Brewhouse Newcastle.

    Joe Lappin

    Joe Lappin

    Assistant Brewer, Sales & Logistics
Joe has been a regular on the Newcastle hospitality circuit for over 10 years, appearing at venues as diverse as King Street Hotel, The Lass O’Gowrie, Newcastle Yacht Club & Carrington Bowling Club.

His love and passion for craft beer took him to a sales role at Murray’s Craft Brewing Co, and his desire to learn more about the Craft of Beer lead him to FogHorn Brewhouse.

When he’s not backing up Shawn in the brewery, Joe can be regularly seen at the frontline of the FogHorn bar. As one of only a handful of Ciccerone Certified Beer Servers in the region, he is always up for a chat about great beer!

    Aaron Hogg

    Aaron Hogg

    Bar Manager
The former radiographer took a big change of direction in 2003 when he dived into the hospitality industry – at the deep end no less – and took on the role as Manager of the Stag & Hunter Hotel.
During this tenure of more than 13 years he trained and mentored dozens of budding food & beverage workers and consolidated the experience of a handful of veteran colleagues, always with the primary focus on quality customer service.
It is no secret that Hoggy loves beer – the darker the better, as a rule of thumb. Did someone say Rye IPA? Conveniently, his love of beer has helped him rapidly drink in the knowledge that is on-tap at Foghorn Brewhouse (see what we did there?) and share it all with his staff and customers.
Now … where’s that Rye IPA?
